Recipe: Roasted Red Pepper Soup

My kids love to snack on raw peppers, so I always make sure I have plenty in the fridge. However, sometimes they don't eat them as quickly as I'd like!! Typical kids!! So I made this soup to use up the peppers that were going past their best. Although the recipe is called red pepper soup, you can use any coloured pepper you have.


Ingredients:

  • 4-5 peppers

  • Drizzle olive oil

  • 2 cloves garlic

  • 1 onion

  • 1 tin tomatoes

  • 400ml vegetable stock

  • Handful fresh basil


Method:

  • Roughly chop and roast the peppers with a drizzle of olive oil and salt and pepper for 45 minutes.

  • For the last 10 minutes of roasting, add 2 cloves of garlic to the tray.

  • Saute the onions in a little olive oil for 5 minutes until soft.

  • Add garlic, peppers, tomato and stock to the pan and simmer for 20 minutes.

  • Add the basil at the end and blitz with a hand blender until smooth.

  • Season to taste and enjoy!

(If you have a soup maker, roast the peppers and garlic as above and add everything to the soup maker to cook/blend).
